'Christmas Gobble' Turkey Caesar Salad

Ingredients

 
  1. 1 tablespoon olive oil
  2. 200g ham, diced
  3. 20g butter
  4. 1 teaspoon of crushed garlic
  5. 4 slices crusty Vienna loaf, remove crusts
  6. 1 cos lettuce or bag of mixed salad leaves
  7. 50g parmesan cheese, shaved or grated
  8. 10 cocktail onions, halved
  9. 600g cold turkey meat, diced
  10. DRESSING (either store-bought Caesar salad dressing or make your own!):
  11. 1 cup mayonnaise
  12. Juice of ½ lemon
  13. 2 tablespoons sour cream
  14. 1 teaspoon crushed garlic
  15. 6 anchovies (optional)

Method

Heat oil in a fry pan at medium heat. Add diced ham, and fry until golden brown (about 3-4 minutes). Place ham on a paper towel to drain.

Add butter, garlic and bread to the pan. Fry bread for 2 minutes each side, or until brown. Place on a paper towel to drain.

In a large bowl, toss together lettuce leaves, parmesan cheese, cocktail onions, ham and turkey meat.

For dressing, mix all ingredients in a blender until smooth. Pour evenly over salad and fold together.

Serve salad in a bowl with a slice of crustybread on the side.
