Gingerbread Crumble

Ingredients

 
  1. 1 cup leftover gingerbread
  2. Mangoes
  3. Peaches
  4. Caster sugar
  5. Lemon juice
  6. ¼ cup plain flour
  7. 60g butter

Method

Cover the base of a dish with a mix of leftover mangoes, peaches, apricots, caster sugar and lemon juice.

Whizz together the plain flour and butter with the leftover gingerbread to make the crumble mixture.

The mixture is scattered over the fruit and then baked at 180°C for 30 minutes.
