Thai Lemongrass Chicken Curry

Ingredients

 
  1. 2kg chicken thighs
  2. 2 cups long grain rice
  3. 2 cups coconut cream
  4. 1 lemongrass stick
  5. 3 limes
  6. 1 red capsicum
  7. garlic
  8. onion
  9. ginger
  10. shredded toasted coconut
  11. corriander

Method

Brown chicken, onion, garlic in a pan.

Add cooked chicken, garlic and onion to a large baking dish.

Add rice, diced capsicum, bruised lemongrass and ginger rind/juice.

Top with coconut cream.

Bake covered in moderate oven for 1hr.

Sprinkle with shredded toasted coconut and corriander when serving.
