Turkey Souffle

Ingredients

 
  1. 1 cup minced or very finely chopped cooked turkey
  2. 1 cup soft breadcrumbs
  3. 1 cup milk
  4. 1 tablespoon flour
  5. 1 tablespoon butter
  6. 2 eggs
  7. 1 tablespoon chopped parsley
  8. salt & pepper
  9. dash of sauce - tomato or plum

Method

Melt butter in saucepan, stir in flour, add milk and stir until thickened.

Separate egg yolks from whites. Beat yolks and whites in separate bowls.  

Add well beaten egg yolks to white sauce, then meat, breadcrumbs, parsley and seasonings.

Lastly fold in stiffly beaten egg whites.

Cook in a souffle dish 20mins at 180°C.
